Eggs On Toast

This is a very simple, nothing recipe, but my daughter still fondly remembers these, and to this day, insists that they still be cut into little squares on toast and served on little one-person pastry serving trays (shown).

Directions

Boil eggs to a medium cook, then chop them up in a bowl after adding a little butter, then salt and pepper. Spread the eggs over buttered toast and cut into 2″ squares. Pick a bread that makes good toast.

One of the things that makes breakfast fun for kids is the unique presentation. These trays came from a business trip that I made to Germany in the early 80s. That is how they served pastries in the lobby of the hotel I was staying.

This is obviously something for kids.
